We all know that it’s important to eat vegetables and we also know most people need more of them. How do you fit in more without feeling like you’re drowning in vegetables? How do you get your kids to eat more? Here are some easy ways to get those nutrient rich foods in you and your family’s body:
1. Add veggies to your sandwiches. You can pile on the veggies without losing the sandwich-y taste of your sandwich. Avocado is an amazing superfood and replaces mayo with its creamy texture.
2. Add sauteed veggies to your pasta sauce for a hearty, delicious pasta night. Spinach, broccoli, kale, swiss chard,green beans, eggplant, onions, garlic can all be finely diced and sauteed in a little olive oil and thrown into pasta sauce or eaten as a side dish. You can choose a couple of veggies or all of them, or use what you have in your fridge. Make extra sauteed veggies for future meals that week.
3. When making smoothies in the morning, throw in a handful of spinach or another dark, leafy green. If you add it to a fruit smoothie, you won’t even taste it’s there!
4. Make a heartier salad with whatever you have in your refrigerator. Dice up mixed vegetables and add in garbanzo beans, white beans, black beans, etc along with some sliced almonds for a delicious, satisfying salad. Find a dressing you love and keep it in stock. 5. Eat your veggie side dishes first as your main meal, and your main meal becomes your side dish. Remember: adding garlic and/or onions makes almost all vegetables taste fabulous!
6. Make a stew, chili, or soup and load it with vegetables. If you don’t enjoy chunky soup, use a hand blender at the end to smooth it out. A slow cooker is wonderful for these type of recipes. Add in extra vegetables, beans, or meat substitute in place of the meat in a recipe to make vegetarian meal.
7. Use your leftover sauteed veggies or salad with beans to make a wrap. Simply toss the leftover veggies into a whole wheat or brown rice tortilla, top with low-fat or soy cheese and a sauce of your choice for a simple, tasty meal. Your salad dressing that you love will make a great sauce for this dish.
8. Pizza is a great place to heap on the veggies! You can even use your leftover sauteed veggies in place of meat on a pizza. Most pizza restaurants have a large variety of vegetable choices, so ask them!
9. Add spinach, broccoli, tomatoes, etc to scrambled eggs. Eggs are not only a breakfast food, but can be an easy solution for dinner!
10. Need a break from cooking? Chinese restaurants have amazing vegetable dishes. Almost all Chinese restaurants have “Buddha’s Feast” which is a large mixture of vegetables and can be made with or without tofu. Try out something new! You might find a new favorite.
